Butter - 3 T
Flour - 3 T (You want equal parts butter/oil and flour to make the rue)
Onion - 1 small/medium, diced
Garlic - 3 cloves, pressed or minced

Milk - 1 cup
Water - 1 cup

1.5 to 2 cups of any cheeses you prefer. It is best to try to use three different kinds to make the flavor more complexed. Smoked cheeses always add great depth of flavor. (Smoked cheddar or gouda or provolone, soft cheeses like gorgonzola or blue cheese or feta, or just regular shredder cheese you happen to have in your fridge like cheddar or monetary jack!)

Parmesan/Romano/Asiago (a blend or any of the three) - 1/2 cup


Spices:
Bay leaf - 1 small to medium sized whole leaf (do not crumble)
Salt - 1/2 teaspoon
Thyme - 1/2 teaspoon
Basil - 1/2 teaspoon
Pepper - 1/4 teaspoon
Nutmeg - just a pinch!
Tabasco - just a shake!


How Do I Make Creamy Cheese Sauce?

Here is how you make Creamy Cheese Sauce:

1) Melt butter of medium-low heat. 2) Add bay leaf and Add onion. Cook for 5 minutes or until soft and tender. 3) Add garlic and spices (salt, nutmeg, tabasco, basil, thyme, pepper). Stir well and cook for an additional minute. 4) Add flour, 1 tablespoon at a time, whisking constantly. 5) Whisk and let simmer for about 2 minutes (until golden brown...do NOT burn!)6) Slowly add 1 cup of milk stirring constantly. Once fully combined, add 1 cup of water. Stir until fully combined. 7) Stir until thick and creamy. 8) Add your three different types of shredded cheeses 1/2 cup at a time. Add 1/4 cup parmesan cheese. 9) Stir and melt cheeses throughout!Add to thinly sliced potatoes (about 4 russet potatoes) for au gratin potatoes. (Cook @ 400, covered, for 1 1/2 hours). Add to al dente penne or rotini (1 pound) for mac and cheese. (Top with breadcrumbs. Cook @ 350, uncovered, for 45 - 60 minutes until golden and bubbly).
