Begin by rehydrating your TVP per the directions on the package.2. While the TVP is being prepared, chop all vegetables, mince the garlic, trim and chop the rosemary, and drain/rinse the beans.3. When the TVP has rehydrated, season to taste with chili powder, cumin, black pepper, salt, and the Hungarian paprika. Mix together.4. Heat a pan to medium-high heat with the olive oil. Once it has reached the proper heat, add the onions, garlic, and TVP. Saute until the onions are translucent and the TVP starts to gain a golden-brown color. As the mixture cooks, begin to add Liquid Smoke (the amount is up to you, I like lots!). 5. Now add the remaining vegetables, herbs, and spices. Also, you may want to taste the chili and add additional spices.6. Reduce the heat SLIGHTLY and simmer, covered, for 18-23 minutes. Add Tabasco at this time. You can add a bit of water, but the chili will become more liquid as the vegetables cook down.7. The chili is ready when the vegetables are tender and the general texture has taken on the traditional "chili" smell and appearance.8.
