1/5 cube tofu, extra firm, cubed

1 1/2 cups dry couscous

2 1/4 cups water

2 tbls extra virgin olive oil

1 whole cube Knorr Chicken Bouillon

1 tsp lemon pepper

Here is how you make Kaleidoscope Couscous:

After prepping the veggies, heat the olive oil in a large, deep skillet on medium heat. Add the peppers and carrot, stirring until both are desired doneness (I prefer mine with a little crunch to it.)Add the rest of your veggies and tofu, also stirring until done. Pour in water and add the bouillon cube, letting it melt down a bit and slowly stirring to distribute throughout the skillet. Stir in couscous.Keep the couscous moving for a minute, then cover and turn off the heat.
