masaman curry paste, 8 tbsp or small can
Coconut Milk, 8 cups
Tamarind Soup Base, 1 envelope
Warm water, 2 Cups
Onions, raw, 2 medium
Red Potatoes, raw, 8 cups diced
Cabbage, fresh, 1 head, medium, cut into bite sized pieces
Cauliflower, raw, 1 head, medium, diced
Broccoli, fresh, 2 bunch, medium, diced





How Do I Make Masaman Curry?

Here is how you make Masaman Curry:

Chop all your veggies ahead of time, and shake and open all of your cans of coconut milk, because this cooks quickly in the beginning, and if you're trying to keep up as you go, it will burn. In a stockpot, on Med. High heat, add 3 Tbsp. of olive oil, and Masaman curry paste. Break up the paste, stir it around, and allow it to cook a bit, about 2-3 minutes. In a small bowl, mix tamarind soup base with the 2 cups of warm water. Add coconut milk and tamarind soup to stock pot, bring to a boil. Add potatoes, and onions, bring back to a boil. Add cabbage, broccoli, and cauliflower, bring back to a boil. Turn heat down to simmer. Allow to sit for at least 10 minutes, and keep it on simmer while you are eating, so it will stay warmed through.
