1. Chop the onion, garlic and ginger root.2. Peel the carrots and potato. Chop into large pieces3. Put 1 tbsp coconut or olive oil into a large pot.4. Saute the onions until translucent. Add the garlic and ginger root until fragrant.5. Add the 2 cans of coconut milk. And the chicken broth 1 cup at a time. 6.
