If cooking in microwave - spray one small tupperware container with light cooking spray, and pour in 1/4 cup of egg beaters. Sprinkle in 1 oz reduced fat cheddar or colby jack cheese and stir.Microwave for approx. 1 minute on high or until thoroughly cooked.Slice avocado and mash with fork, or use prepared guacamole.Place tortilla on plate, spread 1/4 cup low fat cottage cheese. **You will want to use a slotted spoon or just try to drain as you don't want your burrito to be too messy if your cottage cheese is at all runny) Place cooked egg mixture on top (might want to cut it up a little with a fork first), and then the avocado mixture.
