While veggies are cooking, in a bowl, whisk 8 eggs, basil, oregano, salt, pepper. (For fluffiest eggs, allow to come to room temperature before using). Gently stir in shredded cheese. Turn on oven broiler.Reduce stovetop heat to medium. Pour whipped egg mixture into skillet. Stir lightly to ensure even distribution of veggies. Cook slowly until frittata is nearly set through the middle. Finish by transferring to oven and cooking under the broiler. Watch closely! Crispy brown spots are yummy; crispy black ones, not so much! Slice into 8 pie-shaped slices and serve hot, or at room temperature.
