1 medium onion, chopped
1 teaspoon salt, divided
1 bunch watercress, washed and chopped
6 large eggs

2 ounces Cheddar cheese, shredded or cubed
1/2 ounce Romano or Parmesan cheese


How Do I Make Watercress Frittata?

Here is how you make Watercress Frittata:

Pre-heat the broiler. Heat stick-resistant skillet over medium-low heat. Add oil and swirl to coat the pan. Add onion and 1/2 teaspoon salt and saute until the onions are soft but not browned. Add the watercress, stir to combine, then cover and steam for two to three minutes or until leaves have wilted and stems are tender. Beat the eggs together in a bowl with other 1/2 teaspoon of salt and a grinding of pepper. Pour the eggs over the watercress. Let the frittata cook undisturbed for a moment until the bottom is set, then slip a spatula under the edge, lift it up and tilt the pan to let the uncooked portion of egg flow under. Do this several more times around the edge of the pan. Sprinkle the cheeses over the top of the frittata. Once the edges are set (any unset egg in the middle will finish under the broiler), put the pan under the broiler. Watch closely at this point because it can go from done to burned quite quickly!
