2 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tsp dried thyme
4 cloves garlic, crushed
1 tbsp minced ginger root

2 cups asparagus, fresh, chopped into 1" segments
2 cups tuscan or lacinato kale, raw and chopped
1 tbsp extra virgin olive oil
1 tbsp lemon juice

12 grape tomatoes

Here is how you make Lemony Couscous with Asparagus and Kale:

Heat broth until it boils. Add couscous blend and 1 tbsp olive oil. Return to boil and simmer covered for 10 minutes. Remove from heat and set aside.While couscous is cooking, prepare vinaigrette in a medium size bowl. Combine lemon juice and thyme, then add olive oil, garlic and ginger.Saute kale using 1/2 of the olive oil and lemon juice set aside for the last step. When kale is just tender, remove from pan and put on a plate. Repeat process for asparagus being careful to not overcook. Asparagus should still have a slight crunch. Put on the plate with kale.Combine all ingredients into the bowl with the vinaigrette, add the grape tomatoes and stir.
