Heat spread in Dutch oven over medium heat until liquid. Add apples and onions and saute 5 mins. Add Kale and gently toss until it is bright green, about a minute. Add water, cover and cook; stirring occasionally 3 mins. Stir in apples (unless you've kept them in there) cover and continue cooking 10 mins, until Kale is tender. Meanwhile, whisk vinegar, mustard and honey in small bowl. Add mixture. Increase heat to medium high. Heat uncovered 3 to 4 mins, until water evaporates.
