1 bunch of kale, cleaned and stalks removed
8 oz whole button or mini bella mushrooms
1 T butter (this can be eliminated, but helps with the taste)
1 T olive oil
3 cloves garlic, minced
1/4 c. dry sherry
sprinkle of coarse salt (to taste)


How Do I Make Smothered Kale?

Here is how you make Smothered Kale:

In a heavy frying pan, heat butter and olive oil over medium heat. Add mushrooms and stir to coat. Cover with a lid that is smaller than the pan so the lid sits directly on the mushrooms and smooshes them down a bit.Let cook undisturbed for at least 10 minutes over low to medium-low heat. They should get nicely browned on the side touching the pan. Stir once or twice, then recover to help them brown evenly.Remove the lid. Add the minced garlic and cook until translucent and fragrant. Add the kale and replace the lid, smooshing the kale down. Cook for 1-2 minutes, then add the sherry and continue to cook until kale is just wilted.Sprinkle with a little coarse salt, toss to thoroughly mix everything, and serve!Absolutely delicious.Number of Servings: 4Recipe submitted by SparkPeople user ENGINEERMOM.
