I made this when I was in the food for falafel but didn't have any chickpeas on hand, and was delighted to discover that these are lower in calories and higher in fiber than the traditional version! Beware, though: these are much softer than regular falafel, so probably won't be popular with people who can't stand "mushy" foods.
