A food processor is handy to get all these ingredients shredded/diced finely - you can do it by hand but it takes longer!

1 medium carrot - shredded
1 c. chopped mushrooms (crimini are great)
1 medium onion, diced
1 c. walnuts, finely chopped
1 c. oat bran (you can make your own by whizzing rolled oats in a coffee grinder or food processor until powdered)
1 c. cooked medium grain brown rice (basmati is good)
1 tbs. natural no sugar peanut butter (crunchy or smooth)
3 tsp Bragg's Liquid Aminos (or soy sauce)
6 tsp yellow mustard
2 tbs tomato paste
1 c. wheat germ


How Do I Make Neat Loaf?

Here is how you make Neat Loaf:

While rice cooks, dice and chop all your ingredients as needed, putting all ingredients into a large bowl as you finish processing them. Add cooked rice and wet ingredients (Bragg's, PB, tomato paste, etc.)Mix all ingredients together. Press into lightly oiled loaf pan. Bake at 350 for an hour or until sides and top are lightly browned. Let cool for 5-10 minutes. I like mine with ketchup! Just like I used to like meaty meatloaf. Your mileage on that may vary. Makes great leftovers as it reheats well. Some folks even make sandwiches.
