Also needed: Sterile stainless steel pot, stainless steel spoon, thermometer, sterile containers to incubate the yoghurt in - and a way to incubate it.

How Do I Make Yoghurt (Goats Milk)?

Here is how you make Yoghurt (Goats Milk):

Using sterile stainless steel pot and utilisils, slowly bring the goats milk up to 165 -180 degress - checking with thermometer. Be careful not to scorch the milk. Once it has reached temperature, turn off the heat and let it cool to 110-115 degrees. while it is cooling, take your yoghurt or yoghurt starter out of the refrigerator and sit it on the counter to let it warm to room temperature.scoop out 1 cup of heated milk and thoroughly mix it with your yoghurt starter. Pour your prepared mixture into the sterile bottles that you will use during the incubation period. Incubate your yoghurt at 110 degrees for 8-10 hours... slightly longer won't hurt but is not necessary.After the 10 hour wait, the yogurt should have separated from the whey (which should be floating on top). You can strain this off or mix it back in. I strain my off and save it for using in other things. The yoghurt will not be the consistancy of store bought yoghurt but should be noticibly thicker than the goats milk you started with. If it is not, something went wrong. You can then either leave your yoghurt thin or you can strain it further using cheese cloth to produce thick greek yoghurt consistancy. The longer you strain it, the thicker it will become - I usually strain mine outside of the refrigerator by hanging the cheese cloth bundle from something with a catch pan underneith it. I do this for an hour or two but if thicker yoghurt is desired, I complete the straining in the refrigerator. You can flavor your plain yoghurt after it is done straining - use fresh fruits, honey, etc. to acheive the sweetness and taste you desire. Serving Size:?Makes 12 half cup servings
