1/2 cup earth balance buttery spread
1 tsp xanthan gum

4 leeks diced and washed
1 cup coconut milk
1 cup water
1 1/2 tbsp cornstarch
1tsp dried sage
1/4 black pepper
1/2 tsp sea salt
1/4 cup nutritional yeast flakes

Here is how you make Gluten Free Leek Pie:

PastryCombine flour and xanthan gum, rub butter into flour mixture until it resembles bread crumbs, or use mixer with a dough hook. Add enough cold water to make a firm dough. Cover and chill in fridge for 30 mins.Leek SauceBlanch leeks in boiling water for 5 mins drain,put back in pot and put aside.In a small pot, pour in 1 3/4 cup milk, warm slowly, in a small jug, mix cornstarch with rest of milk, stir well and add to pot of milk, bring slowly to a boil, turn down heat and allow to thicken, stirring constantly. Take off heat, add the sage, salt and pepper, stir to mix, add the yeast flakes, adjust seasoning, pour over leeks and mix well.Take pastry out of fridge, cut in half, with the 1st half, roll out onto a floured board. Grease a 8" pie dish, place rolled out pastry into pie dish, pour in leek sauce, then roll out 2nd ball of pastry, place on top of leek sauce, cut small steam hole on top, brush with milk, put in preheated oven at 350f for 10mins, then turn heat up to 400 f for 20mins.
