The ingredients for Ernie's Tomato Pie are:

Preheat oven to 375 degrees.

1 9" frozen deep dish pie crust
1 egg white
1 Tbls. instant tapioca
4 lrg. tomatoes
1/2 c. fresh basil, chopped
3 green onions, thinly sliced
1/2 tsp. garlic powder
1 tsp. dried oregano
1/2 tsp. crushed red pepper
2 cups 2% sharp cheddar cheese
1/4 c. fat free mayonnaise
1/2 c. light mahonnaise


Baste pie crust with egg white and cook 5 minutes. Sprinkle tapioca in bottom of pie crust. In alternating layers, fill pie crust with tomatoes, basil, onions, garlic powder, oregano and red pepper. In small bowl mix mayo and cheese and spread mixture over top of pie. Cover pie loosely with foil and bake for 30 minutes. Remove foil and bake another 30 minutes. Serve warm!
