Here is how you make Lighter Pizza Crust:

(Using a mixer with a paddle and a dough hook) Combine 2 cups flour in large bowl with yeast. Stir to combine. Add salt, oil and water. Using paddle, mix well on low for two minutes. Switch to dough hook and add remaining flour gradually or enough till dough pulls away from sides of bowl and holds together well. Knead on med low for 2 more minutes. Remove dough. Spray bowl with cooking spray. Return dough and spray the top. Cover and let rise for about an hour. (if using a pizza stone, preheat it in oven, as below, during this time)Once doubled in size, separate into two lumps. Gently stretch yedough onto parchment rounds until approximately 12" in diameter. Don't press! Spread a thin layer of sauce over it and top with your favorite toppings. Using a pizza peal or rimless cookie sheet, transfer the crust on parchment to the pan in the oven and bake about 15 minutes.In an electric oven, preheat with pan on middle shelf to 425F. In a gas oven, move rack to top shelf, place pan of water on bottom shelf and preheat with pan to 400F. (Make sure the pan you are using has adequate air circulation all around the pan. The top of the oven will reflect more heat and cook the top more evenly with the bottom of the crust).
