1 laughing cow light queso fresco and chipotle cheese wedge
2 tbsp fresh pico de gallo
a few dashes taco seasoning

**note: cheeses can be replaced with other low fat spreadable flavors, this blend was just particularly flavorful.

Here is how you make Improvised Mexican Pizza:

Preheat skillet to medium-high and spray with nonstick spray.On a plate spread one tortilla with pepperjack wedge and other tortilla with queso fresco. Sprinkle pico de gallo and taco seasoning over one of the tortillas and place other on top, cheese-side down. Place quesadilla in skillet and cook for about 1 1/2 minutes per side, or until crispy and brown. Cut into 6 wedges and serve!Serving Size:?makes 3 servings, 2 wedges each
