Here is how you make Whole Wheat Pizza Dough (KA p.134):

Measure 2 C of flour into a medium mixin bowl, stir in the yeast. Combine water and honey, add to flour mixture and stir to mix well. Cover with plastic and let rest for an hour. (I just threw all of this in my bread machine on the dough setting for an hour).Stir in the olive oil, salt (and herbs/spices). Then add the remaining 1.75 C of flour. Turn the dough out onto a lightly floured surface and knead for about 5 mins, until shiney and elastic but still quite soft. Resist the temptation to keep adding flour- this should be softer than bread dough. Return to the bowl, cover and let rise until double, about 1.5 hours. (Again, the bread machine dough setting was very helpful here, I just started it over and it mixed and kneaded it beautifully).Place the baking stone on the bottom rack of the oven and preheat to 375 deg F. Cut the dough in half. Use a well floured rolling pin to roll out the dough to about 12" round or 10x12 rectangle. Place the dough on a pizza pan or parchment paper. Repeat the process with second piece of dough. Roll the edges of the dough up to make a small rim. Prick all over with a fork. Bake the crusts on the stone for about 10 mins. After taking the second crust out of the oven, change the temp to 425. Dress your pizzas and bake on the stone until the cheese is cooked the way you like it (around 10-12 minutes usually).
