Kale, .5 cup, chopped
Spinach, frozen, 0.5 cup
Yellow Sweet Corn, Frozen, 0.5 cup kernels
*Diamond Crystal - Kosher Salt, 0.5 tsp
Pepper, black, .5 tsp
Thyme, ground, 1 tsp
Fat free half and half, .5 cup
Milk, nonfat (skim milk), 1 cup

Add butter and olive oil over medium heat in your pot and then add the potatoes and onions. This takes some patience.I roast the potatoes and onions together. I like the edges a little brown when I know its time to add the liquids.Then add the rest of the ingredients, bring to a boil and then reduce heat to a simmer for about 10 minutes.***I use a potato masher to leave this chucky and not quite smooth.
