1/2 med size onion, chunked
3 med size eggs
1/2 tsp salt

Here is how you make Blender Potato Pancakes:

Put the raw eggs in a blender, then add the salt, the flour the onion, and about 3/4 of the potato chunks. Process well to incorporate. Then drop in the rest of the potatoes and the parsley, process just til big pieces are incorporated. You want a bit of texture left, but small enough to cook through. Brush oil on griddle or in frying pan. Cook til bubbles show and it looks partway done. Then flip and cook other side.
