The ingredients for Vegan/GF Chickpea Potato Patties are:

1 cup garbanzo beans (I used soaked -1 cup after soaking- but you could use canned)
I medium sized left over baked potato
1/2c diced bell pepper (I used red)
1/2c diced onion
1/2c shredded carrot
half of a medium sized zucchini chopped
1T crushed garlic
1 veggie bullion cube, crumbled
2T corn starch

Here is how you make Vegan/GF Chickpea Potato Patties:

You need a food processor for this one!Put the beans in the processor, turn it on. (I have an old food processor that has two speed, on and off. use your best judgement on your speed) while that is going dice up your baked potato, add that in to your processor.Add in the veggies and seasonings, basically everyhting but the corn starch should be in there.Once everything is all mixed and smooth, taste it. Add hot sauce, seasonings or what ever tickles your fancy. Then, add in the corn starch. Make sure it is all mixed in.At this point, it is easiest for portion control if you divide the mix into 4 equal portions. I made this into smaller 2" patties but you could easily make two larger patties or just do what ever you want! Pan fry in a non stick skillet over med/med high, if you use oil/pam/butter YOU MUST ADD THAT TO YOUR MEAL TRACKER. I did not add and oil to the recipe so everyone could use whichever you prefer.
