The ingredients for Asian Quinoa Pilaf are:

2 T. olive oil
2-3 tsp. minced garlic, to taste
2 carrots, diced small
2 stalks celery, diced small
1 red bell pepper, diced small
2 cups (approximately) slivered bok choy (I used 3-4 very large leaves with about half the stems)
1/2 block of Extra Firm Tofu, diced small
Spinach leaves (I used about a cup of baby spinach), slivered
Kikoman Teriyaki Sauce - approx. 1-2 T., or to taste
A few shakes of celery salt
About 5 grinds of black pepper
A light sprinkling of salt

Quinoa - I cooked it 2 parts water to 1 part grain in my rice cooker.




How Do I Make Asian Quinoa Pilaf?

Here is how you make Asian Quinoa Pilaf:

I apologize in advance for the lack of true measurements for the seasonings. I don't measure when I stir-fry, so start on the low side and add more to taste.Have everything chopped and ready to go before you heat the oil.Cook Quinoa on top of the stove or in a rice cooker, according to directions on package.Meanwhile, heat olive oil and minced garlic in a wok or large frying pan until sizzling. Add each ingredient in the following order and stir fry for a few minutes, adding a bit of teriyaki sauce as you go: carrots, peppers, celery, bok choy, tofu, spinach. Sprinkle with the rest of the seasonings - but taste before adding the celery salt and salt, keeping in mind your going to be mixing this with unseasoned quinoa.Continue to stir-fry until the carrots are tender but still have some bite. I'd estimate the whole stir-fry process takes 10 to 15 minutes.Serve 1 cup of veggies mixed with 1/2 cup of quinoa.
