Transfer the eggplant on the baking sheet. Roast the eggplant for about 20 minutes or until completely soft to the touch. Remove the eggplant from the oven. Let the eggplant cool for about 10 to 15 minutes. When everything is cool, pull out a food processor. Peel the eggplant and place the flesh in the processor. Add the roasted garlic, cumin, cayenne, chili powder, tahini and 1/2 of the lemon juice. Pulse in the processor. Add some salt and pepper. Taste to see if it needs more lemon. If it does, add a little at a time, pulsing to have all the flavors combine. If it looks thin, add some more tahini. If it is too thick, either add more lemon or a sprinkle of water.
