1/2 block of extra firm tofu
1 red bell pepper
1 can artichoke hearts, drained (not packed in oil)
1 sm can sliced olives
8 oz dry rotini (I use Barilla whole grain)
1/2 cup crumbled feta cheese
4 tbsp olive oil
juice of one lemon
3 tbsp red wine vinegar
2 tsp italian seasoning
garlic powder to taste
salt to taste


How Do I Make Mediterranean Vegetarian Pasta Salad?

Here is how you make Mediterranean Vegetarian Pasta Salad:

Cook pasta according to directions, drain and let cool. Chop the red bell pepper into bite sized pieces, then saute in 1 tbsp of the olive oil. Chop the tofu into bite-sized cubes. Mix the tofu, peppers, pasta, olives, artichoke hearts and feta in a large bowl. Make the dressing by mixing the remaining ingredients well in a small bowl.
