1. Soak the lentils overnight in cold water. 2. After soaking overnight, rinse, drain and sort the lentils.3. Cook lentils in water, letting them simmer, covered, for about half an hour until tender but not mooshy. 4. Drain lentils in a sieve, running cold water over them. Place them, still in the sieve, into a bowl of cold water to cool. Set aside.5. Seed and chop the tomato. Crush the garlic cloves. Place the tomato, garlic, olive oil, cilantro, and cumin [powder] into a bowl. Mix until well incorporated. 6. Drain the lentils and add to the tomato/garlic/olive oil mixture and mix well. 7.
