- 1 red onion, cut in half and then sliced into half-rings
- 1 cup pitted black olives (such as kalamata), either sliced or served whole

Dressing
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons freshly squeezed lemon juice
- 1 clove garlic, crushed and finely minced
- 1 tablespoon finely chopped fresh Italian parsley
- 1 tablespoon finely chopped fresh mint
- Salt and pepper to taste

1. Place the lettuce, tomatoes, green pepper, red pepper, cucumber, and onion in salad serving bowl. Gently toss to mix vegetables.2.
