Add 1 T. olive oil, garlic & dried quinoa to a non stick skillet. Allow to brown on medium-high heat for about 2-5 min. Add water & chicken broth & turn to high. Once it boils, turn heat down & cover. Allow to cook about 15 min. Once the quinoa is cooked, but still a bit "al dente"), remove from heat & allow to cool.Meanwhile, chop up veggies & set aside.
