1/4 cup chopped cilantro
8 med/lg tomatillos
juice of one lime
2 tsps honey
salt and pepper to taste


How Do I Make Salsa Verde for Enchilada Suiza?

Here is how you make Salsa Verde for Enchilada Suiza:

Makes about (5) 1/2 cup servings:Place the two poblano peppers on a cookie sheet and roast under broiler until black on all sides. (leave oven door open to allow steam to escape). Then remove and place in container covered tightly with saran wrap.Finely chop one whole onion, 2 tbsp garlic and one jalepeno pepper and saute in 1 tbsp. of olive oil. While that is cooking chop tomatillos and cilantro and squeeze the juice of one lime and place all into a food processor. After peppers have cooled enough to touch, peel and seed and give a rough chop and add to food processor also until it's a chunky sauce texture. Add this sauce to pan with onions, garlic and jalepenos. Add 2 tsp of honey and salt and pepper to taste. Simmer for 10 minutes and serve either warm or cold. You can get creative, the first time I had it in the enchilada suiza dish, second time I put it on top of a grilled bacon wrapped filet mignon.
