Potato, 1 medium, cubed
Acorn Squash, 0.5 squash, cubed
Frozen or fresh mango, 1 cup, diced
Fresh Pineapple (not canned!), 1 cup, diced
Onions, 0.5 medium diced
Firm Tofu, 1 block, cubed
Brown Rice, long grain, 2 cups cooked


How Do I Make Red Curry and Peanut Sauce?

Here is how you make Red Curry and Peanut Sauce:

1. Heat oven to 425 degrees F. Cut squash in half, remove seeds and innards, and cook for 35-45 minutes with cut side down, until cooked through. When done, remove from oven, remove skins, and dice up one half2. Start the rice so that it is cooking while you prepare the rest of the meal.3. Saute onion and tofu in olive oil in a large skillet until tofu is slightly browned.4. Meanwhile, combine coconut milk, curry paste, sugar, and soy sauce in a medium saucepan. Heat until blended. Then add peanut butter and stir/heat until all is well blended.5. Once the onion is cooked and tofu is browned, add the chicken base and water to the skillet. Bring to slight boil, then add potato and curry/peanut mixture.6. Cook about 15 minutes, then add the the mango.7. Cook about 5 minutes, then add the pineapple. 8.
