Here is how you make Roasted Tomato Sauce, Old Italian Style:

Preheat oven to 400 degrees.Line a cookie sheet with foil.Toss quarted tomatoes and quartered onion on sheet, spray with olive oil spray and roast for 15 minutes. Add garlic cloves and stir underneath tomatoes so they don't burn.Roast another 10 minutes and check for doneness. When done, the onions will be getting golden and the garlic is soft. If this hasn't happened yet, roast in 5 minute increments until garlic is soft.To blend: (A blender is best , but a food processor is OK if that's all you've got.) Tear the bread into small pieces and put them into the blender. Add roasted tomatoes, garlic and onions. Add 1/2 the vegetable broth and blend.
