The ingredients for Roasted Tomato Sauce are:

1503 grams Red Ripe Tomatoes
5 cloves Garlic
2 medium (approx 2-3/4" long, 2- Sweet peppers (bell)
2 tbsp Extra Virgin Olive Oil
fresh herbs (I used summer savory and sweet basil)
1 tbsp Balsamic Vinegar


How Do I Make Roasted Tomato Sauce?

Here is how you make Roasted Tomato Sauce:

Rinse tomatoes and cut each in half; squeeze out seeds. Line a large shallow baking pan with foil and brush 1 tbsp. olive oil on pan. Place tomatoes cut side up on pan. Cut peppers in half, remove seeds and membranes and place on pan. Take a head of garlic, trim off tips and remove loose outer papery layer. Place on roasting pan with tomato halves and peppers. Sprinkle 1 tbsp. olive oil over all, lay herbs in amongst veggie. Roast at 375 degrees F for 30 minutes. After 30 minutes, remove pan, carefully drain accumulated juice from tomatoes (be sure to keep the juice). Turn tomatoes over and return to oven for another 30 minutes or so. Remove pan from oven and let veggies cool. When cool, remove as much skin from tomatoes as you wish and place roasted tomatoes, the peppers and as many cloves of garlic as you wish into your food processor. (Just squeeze the roasted garlic from each clove; roasting makes the garlic sweeter and less "biting"). Process until sauce is desired consistency; add as much of the roasting juice as needed. After sauce is blended, add 1 Tbsp. balsamic vinegar and blend well. Store in refrigerator if you are not using it immediately. Should keep up to 2 weeks in refrigerator. You can always freeze it if you won't be using it.
