1. Cut Zucchini, green peppers and carrots into thick slices or chunks. 2. Either peel the potatoes or not, your call. Cut into pieces similar in size to the veggies in #1.3. Peel garlic cloves, and leave whole. Slice white part of spring onions.4. Snap off ends on green beans and remove strings if stringy. Halve long ones.5. Mix veggies in large bowl. Add Italian spices (to taste), salt (to taste and EVOO. Mix well.6. Place into slow cooker (I use my 4 qt). Cook on HIGH, stirring each hour.7.
