This is a hearty winter soup - which is made is huge quantity. It freezes well. Add spices before serving according to taste. This recipe makes 38 servings of 1 cup each. The longer it is cooked the more it thickens so it is more like a stew than a soup.You need a big stock pot to make this.First take a saucepan and put water and the dried peas in it and bring them to a boil and let them cook while you are chopping your other vegetables.Chop your carrots, potatoes, onions, turnips, celery, broccoli and add them to the 12 cups of water in the stock pot. Bring to a boil and cover and allow to cook for a half hour. Add the chopped garlic (I used the pre-chopped bottled garlic) and the other spices.When the split peas are cooked and soft they can be added to the soup with or without their cooking water -if there is any of it left.Add the peas and corn (I used frozen so not adding extra salt) and the lentils and add the canned diced tomatoes.I use the canned tomatoes with salt but if you are using a salt free type then add a teaspoon of salt to the recipe.Add any remaining spices and let cook for another 45 minutes to an hour so everything is tender and the soup is thickening naturally as the water evaporates.This is a thick and delicious soup in winter - a single cupful is great before a meal as an appetizer or a couple of cups make a good filling low calorie lunch.Number of Servings: 38Recipe submitted by SparkPeople user STEPHC..
