Adapted from Shape magazine's December 2010 issue. I added it to see what the difference in calories and flavor would be if I substitute half of the potatoes with cauliflower... Let's find out!It's 322 calories and 6.7 grams of fiber per serving using 2 pounds of potatoes,and 254 calories with 7.3 grams of fiber when you substitute 1 pound of cauliflower for half of the potatoes. That's cool. Still have to do the taste test! (Then I tried adding a 340g box of silken tofu and that ups the calories to 300, and protein to 13.g and fat to 7g.)The recipe says it makes 4 one-cup servings, but I have to imagine there's more than 4 cups of soup even after simmering 5 cups of broth uncovered for 15 minutes with 2 pounds of veggies and adding 2 cups of dairy, but I'll let you know for sure!
