1 cup white beans
1 cup Red beans
1/2 cup Adzuki beans
1 cup pearled barley
1/3 cup oats
1/3 brown, red or wild rice
1/3 cup buckwheat groats (optional)
1 LB carrots sliced
1/2 LB celery sliced
1 LB Onions chopped
10 cloves garlic coarsely chopped
4 qts water (16 cups)
Spices to taste - I use crushed red peppers or jalapeno pepper, bouquet garni, pepper...what ever your taste buds desire.

Here is how you make Everything Soup - Vegetarian:

Soak beans overnight (or bring to a quick soak.) Pour 4 quarts of water in with the beans and bring to a boil. Add barley, oats, rice and buckwheat groats and all chopped veggies and garlic. Add spices to taste.Make sure soup is boiling with all ingredients in it before setting on simmer for approx. 1 hour or so. If soup gets too thick, add more water. This is a giant batch that I make to give away and to freeze. It makes approximately 16/1 cup servings. Number of Servings: 16Recipe submitted by SparkPeople user EVARICHARDSON.
