Dice onionHeat 2 T olive oil on medium heat in bottom of stock potAdd onions, cook 4-5 mins, stirring occasionally to prevent browning.Chop celery, add to onions in pot, cook another 2 minutes, stirring occasionallyChop carrots, add to onions and celery, cook another 2 minutes, stirring occasionallyMince garlic, add to pot, cook another minute, stirring occasionallyRinse split peas and check for rocks, non-peas.Add peas to pot with veggies, stir, cook about a minuteAdd 9 cups water to pot, bring to boil, lower heat to a simmerDice red potatoes (leave skin on), add to potAdd salt and pepper to taste. Add salt, even if you normally do not cook with salt, soup really needs some salt.Simmer for about an hour, stir every 15 minutes or so and check to be sure the heat is not too high to make it stick to bottom of pot.Soup is done when split peas are no longer visible and contents of pot are thick.
