This is a variation of several zucchini recipes I've seen lately! You can also replace the Panko with French fried onions or those little tortilla strips, as well a taco or fajita seasoning, for more of a southwest flavor! You can use more or less of any of the ingredients to your liking!

1 medium zucchini shredded
1/3 cup panko bread crumbs (French fried onions or those tortilla strips work well too. Especially for a southwest flavor!)
1/4 cup Chopped mushrooms
1/4 cup canned black beans (rinsed)
Any cheese, to your liking (I'm non-dairy right now!)
Onion, garlic, salt, pepper to taste
1 egg, 2 whites

Mix it all up, spoon into 12 cup, standard, sprayed muffin tin, and bake at 375-400 for 15ish minutes. Serve with salsa!
