Here is how you make Spinach and Tomato Omelette:

Spray large non-stick pan with non-stick cooking spray. Heat on medium. Mix eggs and water thoroughly. Pour into pan and cover. Cook on medium to medium low until eggs are just set. Meanwhile, saute onion and garlic in small pan with non-stick spray. When soft, add spinach to heat. When eggs are set, spread spinach mixture on half of the eggs. Add chopped tomatoes and cheese.
