1 Tbsp canola oil
1 sm onion, chopped
2 cloves garlic, minced
1 tsp dried basil
2 italian tomatoes, diced
8 oz reduced fat cottage cheese
1/2 cup part skim mozzarella cheese, shredded
1/4 c chopped fresh parsley
1/4 tsp salt
1/4 cup parmesan cheese, grated
3 Tbsp seasoned bread crumbs


How Do I Make Spaghetti Squash Supreme?

Here is how you make Spaghetti Squash Supreme:

Halve squash lengthwise and remove seeds. Place cut side down into greased 13" X 9" baking pan. Bake for 30 minutes at 350 degrees or until soft when pierced with fork. Remove from oven and cool to handle. Using a fork, scrape and separate squash strands into a large bowl. Heat oil in large skillet. Add onion, garlic, and basil, cooking for 4 to 5 minutes or until softened. Add tomatoes and heat until the mixture has absorbed most of the water. Combine cottage cheese, mozzarella, parsley, salt, and onion mixture with squash. Pour into prepared baking dish and top with parmesan cheese and bread crumbs. Bake until bubbly and heated through, approximately 30 minutes.Serving Size:?Makes 6 large servings
