6 flour tortillas
6 x 1 tsp olive oil
1 1/2 cups cooked mashed pumpkin
1 1/2 9" parsnips, cooked and mashed
1 1/2 cups cubed yams, cooked and mashed
220gms cleaned and sliced mushrooms
1 cup sliced zucchini
1 cup steamed spinach, sqeeze out excess water.
100gms feta cheese
125gms 1% fat cottage cheese
2 TBLSP sweet chilli sauce
280gms tomato pasta sauce, divided into 2 equal portions

Here is how you make Tortilla Stack:

Lightly stir fry the zucchini in 1 tsp olive oil, set aside.Lightly stir fry the mushrooms in 1 tsp olive oil, set aside.Assemble the stack:Place one tortilla into the bottom of a lightly greased spring-form, round cake tin. Spread the mashed pumpkin over and crumble 50gms of feta over the top.Place another tortilla, mix the cottage cheese with the mashed parsnip and spread onto the tortilla.Place another tortilla, spread the mashed yam over, then place the drained spinach on top, drizzle with the sweet chilli sauce.Place another tortilla and spread the zucchini slices, season with salt and lots of pepper, pour one portion of the pasta sauce over.Place another tortilla, spread sliced mushrooms over.Place the last tortilla, spread with the other portion of pasta sauce and crumble over 50gms feta cheese.Bake at 170 C or 350 F for 30 mins.Let stand for a few minutes before removing from tin and servingNumber of Servings: 8Recipe submitted by SparkPeople user MILLY61.
