* Organic All-Purpose White Flour, 1 1/2 cup + 1/4 cup for dough rolling
* Whole Wheat Flour, 1/2 cup
* Salt, 1 1/2 tsp
* Earth Balance Vegan Buttery Sticks, 2 Tbsp


How Do I Make Croissants (Vegan)?

Here is how you make Croissants (Vegan):

Measure out your vegan butter and let it sit to get a bit melty while you start the next steps.Warm the milk (you can use any milk you like; we used almond since we had it on hand.) You can warm it in the microwave on low for 3 minutes works pretty well for me. Add the sugar and dry yeast; cover and place in a warm spot (on the top of my gas stove works well.) Let it sit for 5-10 minutes.Combine the flours and salt in a large bowl. When the yeast and milk are nice and frothy, pour them into the bowl and mix well (we used a stand mixer.) With the 1/4 cup of flour you reserved for dough rolling, grab a little bit and flour a clean flat surface. Roll and knead the dough lightly, then roll it into the size of a large cookie sheet (mine is 15" x 10"). Take about a 1/2 Tbsp of your vegan butter and rub it over the dough. Fold the dough in half. Place in a large zip lock bag. (Fold it in half again if you need to in order to make it fit.) Place in the fridge for 30 minutes. Okay, 30 minutes have passed. Pull out the dough. You've folded it in half once or twice. Roll it back out to the original size ou rolled it to - 15" x 10" or so. Once you've gotten it rolled out to that size, take another 1/2 Tbsp of butter, roll it all over to coat, then fold in half. Again, place in the bag for 20-30 minutes (depending on how impatient you are.) Okay. You know the drill. Use the rest of the butter. This time, when you pop the dough back in the fridge, preheat the oven for 425.Okay, now that you've done this three times, it's time to do it one last time. This time roll it out to 10" x 20" or so. Then cut it into 8 squares with a pizza cutter. Then, cut each square in half diagonally. Hit up YouTube for some croissant rolling videos to see the shape you're looking for and ho to roll them. Line a cookie sheet with baking parchment paper or aluminum foil and spray it with oil. Place your croissants carefully on the sheet (We needed to sheets to give ourrs enough space.)
