1 jar Ragu Tomato & Mozzarella Pasta Sauce
1/2 jar Bertolli Four Cheese Rose Pasta Sauce
8 oz. Uncooked Lasagna Noodles
16 oz. Skim Milk Shredded Mozarella Cheese
2 cups Light Ricotta Cheese
1 Large Egg
4 cups sliced Zucchini w/skins on
3 cups sliced Yellow Summer Squash w/skins on
1 pkg sliced White Mushrooms
1/2 cup finely diced Onion
2 cups fresh Plum Tomatoes, small dice
1tsp Black Pepper
1 tsp Sea Salt or Kosher Salt
1 tbsp Olive Oil





How Do I Make Hearty Vegetable Lasagna?

Here is how you make Hearty Vegetable Lasagna:

In a large deep skillet, saute garlic in hot olive oil approximately 2 minutes, stirring constantly. Next, turn to medium heat and add Zucchini, Yellow Squash, Mushrooms and Onion to olive oil and saute until vegetables are tender. Season with Sea Salt and 1/2 tsp Black Pepper. *If the mixture requires liquid, add 1/4 cup water to pan and finish saute. Add pasta sauce and four cheese sauce to pan, with diced tomatoes. Let simmer 5 minutes.Next, take a 13x9 pyrex dish and ladle sauce in enough sauce to cover the bottom of the dish. Add a layer of lasagna noodles. Ladle in half of veggie mix on top of noodles and then sprinkle 1/3 mozzarella cheese on top. Add a layer of lasagna noodles and cover with mixture of ricotta cheese, egg and remaining black pepper. Sprinkle with 1/3 mozzarella cheese and add last layer of lasagna noodles. Add remaining veggie mixture and sprinkle 1/3 mozzarella cheese on top.
