How Do I Make Roasted Vegetable Quinoa?

Here is how you make Roasted Vegetable Quinoa:

If you're using dry quinoa (that you would buy in the bulk section) then soak it in water for 15 minutes and then rinse in a colander. Add quinoa and water to a pot and cook on high until boiling. Once boiling lower heat to achieve a medium boil and cover. Cook for 15-20 minutes until done. Spray a pan with some cooking spray then add mushrooms, broccoli and cauliflower and cook until done. [You can really add any vegetable you would like to this recipe.] Season with salt, pepper and any other seasoning you like to taste.Once the vegetables and quinoa are both done combine in a bowl and enjoy hot.
