What Are The Ingredients For Colorful Veggie Hash Recipe?The ingredients for Colorful Veggie Hash are: 3 Yukon Gold potatoes, about a pound1 Roma tomato, cut into large dice 1 cup yellow onion, cut into medium large dice 3 cloves garlic, pressed or minced 1 large carrot, sliced thin (I used the 3/16" blade on a mandoline.) 4 cups kale, chopped or torn into small pieces. I used red kale. 12 ounces young green beans, snap off ends - If you are using larger beans, you might want to cut them in half. 8 ounces mushrooms, sliced into medium pieces 2 tsp Massel All Purpose Bouillon & Seasoning Granules, Chicken Style, Salt Reduced 1 15-ounce can Westbrae Garbanzo Beans, low sodium, drained and rinsed. Be sure to save the aquafaba for later use. 1 1/2 cups water 2 1/2 tsp Trader Joe's 21 Salute Seasoning Generous sprinkle of red pepper flakes How Do I Make Colorful Veggie Hash?Here is how you make Colorful Veggie Hash: 1. Scrub Yukon Gold potatoes to remove grit and dirt. Place in saucepan, adde enough water to cover plus a couple of inches. You could also use a pressure cooker or microwave. Cook until tender but not falling apart. Remove from heat, drain in colander, and set aside. NOTE: This step can be done in advance. It works well to have refrigerated cooked potatoes on hand for this. If using cold potatoes, bring them back to room temperature before using.2. Preheat oven to 425? and line a baking sheet with parchment paper. When oven is hot, rinse green beans and shake off excess water. Put them in a wide bowl and sprinkle with about 1 tsp of Trader Joe's 21 Salute Seasoning. Toss gently. Spread them evenly over the parchment lined baking sheet, and roast for 15 minutes. Remove from oven and set aside. NOTE: This step is for roasting green beans or asparagus. You may skip it if you want to add them at the same time as the other ingredients.3. Heat the water and pour it over the Massel granules in a glass measuring cup. Stir well.4. Place a 4 -5 cup saucepan or stockpot over medium high heat. I prefer using a wide pan with a lid. When water is simmering, add onions and stir until almost translucent. Add garlic, remaining Trader Joe's 21 Salute Seasoning, and red pepper flakes. Stir well until translucent. 5. Add carrots and mushrooms. Cook until the mushrooms begin to release liquid. Add cooked potatoes and drained chickpeas. Stir to incorporate mixture. Add kale, and cover the pan. Cook until kale has begun to wilt, checking every 5 minutes. When it begins to wilt, stir it into the other ingredients. Remove from heat and let the mixture rest about 5 minutes.6. Remove lid, stir once again, and adjust seasoning if desired. Do not add salt. Add green beans and gently stir into the rest of the veggies.7. If you want more leafy greens, have some on the side. If you have some of them left over, combine them with the rest of the hash to have another day.8. That's it! Serve in pasta bowls. Sprinkle with nooch if desired.
