Here is how you make Veggies and eggs:

Toast one slice of whote wheat bread. Using a small non stick skillet, medium heat, cook onion and sweet red pepper in 5 squirts of cooking spray until soft. Salt and pepper to taste. Transfer to warm plate on top of toast. Using same pan, add 1/8 - 1/4 inch of water. Bring to a boil. Add eggs, salt and pepper. Cover and cook for 3-5 minutes depending on desired softness.
