Here is how you make Goat Cheese Stuffed Mushrooms:

Preheat oven to 375 degrees. Clean and de-stem mushrooms, and chop stems. Heat 1 tbsp olive oil in heavy saucepan, and sautee chopped stems with onions. When caramelized, add fresh thyme, salt, and pepper. Turn off heat and melt goat cheese into mushroom and onion mixture. Taste and adjust seasoning.On large sheet pan, arrange cleaned mushroom caps. Stuff with about a teaspoon of the warm mushroom, onion, and goat cheese mixture. Drizzle with remaining 1 tbsp olive oil. Bake in preheated oven for about 20 minutes, until mushrooms are cooked and cheese has begun to brown slightly.
