In a sauce pan using lite cooking spray, brown veggies. Add chicken stock and cooked chicken, cover and simmer one hour. Puree in food processor or blender, return to pot. Season with salt and pepper. If you use prepared stock you might wish to add sage, thyme and rosemary. Stir in Half and Half.
