Here is how you make Chicken Wild Rice Soup:

Add celery, carrots, and onions to a food processor. Pulse until chopped finely.Fry bacon in large Dutch oven, remove when cooked through. Do not drain. Add mushroom with a little salt to Dutch oven and cook until browned. Remove mushrooms and set aside. Add 1-2 tbsp olive oil to Dutch oven and cook celery, carrot, onion mixture for about 10 min, stirring occasionally. Season with fresh thyme, salt and pepper. Add garlic and continue cooking for another 1-2 min. Sprinkle flour on the vegetable mixture and continue cooking for another 3 minutes. Add the wild rice and keep stirring for a minute to toast it.Slowly pour in the chicken stock, stirring to prevent any lumps from forming. Stir in the potatoes, chicken, mushrooms, and bacon and bring to a boil. Turn down to a simmer, cover, and cook for 30-35 min until wild rice and potatoes are cooked through. Remove from heat and stir in cream. Season to taste with salt and pepper.Serving Size:?Makes 8 bowls (approx 14 oz each)
