Comfort food at it's best. This chicken soup is a very low fat calorie saver that really fills you up. Easy to make on a lazy weekend afternoon while watching a movie. I make my soup in an 6 qt stock pot so it's a bit tight to put a whole chicken in there which is why I use hindquarters/chicken legs instead. A half or whole chicken works well too, you can use just about any skinless chicken with bones. I love corn in my soup but you can omit that or replace it with beans or peas. When I have a hectic week coming up and I don't want to fall off the wagon I will prepare a batch on Sunday. That way I have a healthy, quick and convenient meal ready to go all week long. No excuses.

3 chicken hindquarters/legs (drum and thigh), skin removed
3 cloves of garlic, peeled and crushed with flat edge of knife
2 med. yellow onions
4 large carrots, peeled
8 med celery stalks
1 red bell pepper
1 green bell pepper
1/3 head of green cabbage
1 cup fresh parsley, chopped
12 oz. can of corn, drained
14.5 oz. can of stewed tomatoes, not drained
14.5 oz. can of diced tomatoes, not drained
2 teasp italian seasonings
1 teasp sugar
1 teasp (or to taste) cayenne powder
1-2 tablesp (or to taste) knorr's chicken instant stock mix, unprepared
S&P to taste (more pepper than salt due to sodium level in stock mix)
tap water


How Do I Make Healthy and Delicious Homemade Chicken Soup?

Here is how you make Healthy and Delicious Homemade Chicken Soup:

Roughly chop in large pieces half the carrots, half the onions and half the celery. Place in 6 qt stock pot with skinless chicken legs and half the parsley. Peel garlic cloves and crush once with flat side of knife and add to pot. Add the italian seasonings, cayenne powder, about 1 teasp of pepper and dash of salt. Fill pot with cold water to about 1-2 inches from the top. Cook on stove at high heat until water comes to a boil. Turn stove down to medium and bring to a steady simmer. Leave pot uncovered. Stir frequently and skim off any foam/fat that comes to surface. I like to add water throughout simmer as broth evaporates to keep pot full and maximize broth amount. You want to simmer long enough to bring out all the flavor from the veggies and have the meat falling of the bone. I find 90 minutes is just about perfect. The veggies should be pretty mushy by the time you take it off the stove. Strain the broth into a large bowl and set aside. Put chicken back into pot off the burner. The vegetables have lost lots of their flavor and texture so you can throw these away. With two forks, pull the meat off the bones and discard the bones. Shred meat til it is bite sized. Chop the rest of the vegetables into medium bite sized chunks and add to pot. Add the corn, parlsey and both cans of tomatoes. Sprinkle the sugar on top of the tomatoes. Now taste the broth. Chances are you will need to add some of the dry stock mix, I usually use about 1-2 tablespoons. I also like to add a bit more cayenne to kick up the heat. Once you reach the desired taste of your broth, add it back to the pot. It may be a tight fit so add as much as you can and save the rest to top up the pot as it simmers down. Bring soup to a low simmer and cook for about another hour or until vegetables are cooked but not too soft.Serving Size:?about 10 2-cup servings
